I absolutely love baking and one of my favourite things to bake are cupcakes! Here is an easy and delicious recipe for Pretty Pink Cupcakes.
I decided to bake my own cupcakes for my daughters first birthday last November and I was absolutely thrilled at how they came out. This vanilla cupcake recipe is really easy to make and so delicious, so I thought that I would share it with all of you.
The colour scheme of her birthday was pink and white so I wanted the cupcakes to fit in with that. I decided to bake a plain vanilla cupcake and decorate it with pink and white butter icing. To make the cupcakes stand out even more I got some pretty pink and white polka dot cupcake liners to bake them in. Here is the recipe for these easy pretty pink cupcakes:
1 Cup of sugar
1 1/2 Teaspoons of baking powder
3 Tablespoons melted butter
1/4 Teaspoon salt
1 1/2 Cups of flour
3/4 Cup of milk
5ml Vanilla essence
Pre-heat your oven to 180°C
Beat the eggs and sugar together for 4 minutes
Mix in the flour, baking powder and salt into mixture
Heat the milk and butter together and mix it into the mixture
Add in the vanilla essence
Bake for 15 minutes
I chose to decorate the cupcakes with a pink and white butter icing. All I used to make it was butter, icing sugar and pink food colouring. Here is how you create the white and pink icing mixture:
1. Mix two batches of icing, one white and one pink.
2. Fill half of your piping bag with white icing and the other half with pink icing and decorate the cupcakes.
