If you have some over ripe bananas lying around, put them to use and try these delicious Banana & Sunflower Seed Muffins.
This is one of my favourite muffin recipes to make. This recipe is easy and it makes 9-12 muffins (depending on how full you make the muffin tray cups). This muffin is best served completely cooled down.
1 1/2 cups of flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 ripe bananas
⅓ cup vegetable oil
1 teaspoon vanilla extract
2 tablespoons sunflower seeds
Pre-heat your oven to 190°C
Combine all the dry ingredients together in a bowl
Mash up the bananas and add the egg, vanilla and oil together and mix well
Mix the wet and dry ingredients together
Fill the muffin tray cups 3/4
Bake for 20 minutes at 190°C
